Out of Africa

A lot of people asked me about this month special menus at Greyhound Cafe, whether what gives me the idea to do African food, and what’s so special about those chili when we have our own chili …so on and so on…

Well first off,  it’s the world cup season, and just to get into the frenzy–like the rest of the world–we’ve decided to feature African food in our menu.  It then got me thinking what kind of flavors and what are the signature dishes that would really represents Africa.  These chili suddenly came to mind,  because when we think of African food we always think of barbecue meat or a really hot and spicy sauce.  These “Scotch Bonnet Peppers” are among the most intensely hot of all peppers, they have a unique earthy and slightly apricot-like flavor which is delightful, assuming the tongue can discern it beyond the intense heat.  So I decided to use the Scotch Bonnet chili peppers as the main ingredient.

What I really wanted to do was to use these chili peppers but also maintaining that unique Thai flavors to suit our taste buds.  So, I thought of doing a little mix and match between the two.  Take ผัดกะเพรา (Pad-kra-pao, a Thai styled stir fried meat with chili and basil leaves) for instant, everyone loves it, it has become the fast food of our nation, when we can’t think of anything we order ผัดกะเพรา!!  So, what if I use these Scotch bonnet peppers instead of the ordinary chili, coarsely chopped them up, and to give it a little twist I would use lamb instead of boring old minced pork!  Serves with fried preserved eggs over hot rice.
